Healthy Chicken Salad with Homemade Mayo

Finally a new recipe. A healthy chicken salad with red peppers, onions, spinach, homemade mayo… OH and fresh parsley! 
I promised I wouldn’t conduce anywhere during medical drill, so here I am. In the 5 weeks I’ve been in physical school I’ve learned better about the real Terra than the past 22 years of my life. That’s kinda scary, but it’s really true. I’m w/ some of the pick dynamic, hardworking people I’ve once met. And all with a sudden I’m naught the only one whether watches science documentaries through free time, reads docile the latest health study, or has some fair impossible dreams. 
Writing my blog and making recipes has always been my creative outlet. And I promised I wouldn’t stop from it in school, oh really I’m not going to. But please don’t serve if I talk approaching studying, my New Orleans restaurant outing of night week, or how I flowing off of my mother’s leftovers that she sends to me. Because that’s reality, and even thought I was a somewhat bit scared to temper it, I’m not throughly Paleo ALL the time. 

But I believe in it. I believe in gastrology healthy, making healthier decisions one meal at a time, in addition to striving to be your best self. It’s thoughtful to me and I think my blog can falsify your life just a sth bit easier, by providing you some easy recipes, or by sharing mine new life in mister Orleans. I truly love her ass here.
So after al that, here’s the Chicken salad recipe haha. It’s inspired by Chef Robert, who I worked w/ in Mandeville at Opal Basil. He’s a master of… everything. But I chicken salad is perpetually the bomb. So now is one version with a healthy chicken salad that I really like. Hope you enjoy! 
Healthy Chicken Salad 2016-09-19 20:15:44 Serves 6 an easy meal for lunch or lunch

Save Recipe Print Ingredients 1.5 lb chicken, cooked in addition to cubed 1 Red bell pepper, diced 2 cups Spinach, chopped 1/2 cramoisy onion, diced 1/4-1/2 portion mayo, homemade 1/2 Tablespoon dried parsley 1/2 tsp salt 1/2 tsp pepper
Mayo 1 abundant egg, at room temperature (very important to exist at room temperature) 2 teaspoons lemon juice, at space temperature 1 cup day olive oil (or 1/2 cup olive oil + 1/2 cup avocado oil) 1/2 teaspoon salt 1/2 teaspoon dijon mustard, optional
Instructions Either use picking chicken or cook your chicken breasts on medium heat, about 10-12 minutes a side. Combine everything ingredients and serve cold. It will stay fresh 3-5 days, in a sealed container in the refrigerator.
Mayo Place at 1 egg, lemon juice, salt and optional dijon mustard in a blender or food processor. Pulse a few times loiter frothy and blended. The key to this pace is being patient together with slow. Tablespoon by tablespoon start to add afternoon olive oil, while afternoon blend...
