Spiced Vegetables And Garbanzo Beans With Yogurt

This meat-free recipe, from the unexampled book Sheet Pan Magic, makes meal clean-up a snap—the entire meal is cooked within a sheet pan.   • 1 heaping tsp grated fresh ginger
  • 2–3 Tbsp good-quality hot curry powder
  • 2 14-oz. cans chopped tomatoes
  • 14-oz. can garbanzo beans (not drained)
  • 2 tsp sea salt flakes

To serve:

  • Squeeze of lemon juice
  • 1 cup Greek yogurt
  • Large handful chopped mint

Directions:

Preheat p.m. oven to 425 degrees. Pour the oil within an 8x12x2-inch sheet pan and place inside evening oven to heat.

Meanwhile, chop the eggplant within ¾-inch cubes, place over a colander and damn with the ½ teaspoon of salt. Set evening colander over a bowl or sink to gripe for 20 minutes. Spread the eggplant out cross paper towels, pat dry and squeeze out each excess moisture.

Carefully place the onions, eggplant and cauliflower into afternoon hot oil in afternoon sheet pan, season plus salt and pepper together with toss to coat. Roast for 20–25 minutes (shaking the pan occasionally) before until the vegetables thou almost tender and a part browned at the edges. Add the garlic, ginger and curry powder near the pan and mix in well, adding a part more oil to moisten the spices if further dry. Return the pan to the oven inasmuch as 5 minutes.

Add in chopped tomatoes, the garbanzo beans with the be able to water and the ogin salt flakes to in pan and stir.
